Over time, other varieties have been added, from Pendolino to Maurino, mainly found on the hills of Valdelsa. In Montalbano, however, Mignolo is cultivated. In general, Tuscan oils are typically spicy, with notes of bitter or sweet, very fruity. This is attributable to the high presence of polyphenols, resulting from both early harvests (with olives at veraison) and the cultivation of plants in hilly environments, the latter characterized by a good thermal excursion between night and day hours.
