"La Rustica" is a polenta flour made from 100% whole red corn, stone-ground, left coarse and raw to preserve the germ, the heart of the kernel, which is its most valuable feature. It then undergoes a light refinement necessary for proper preservation and better edibility. Beautiful to look at and an important source of fiber is the corn bran. With the unique characteristic of minimal processing, the whole grain flour contains the mealy part of the corn, cornmeal, and semolina. Gluten-free product.
