A Classic Method that has been allowed to ferment on the yeasts for 36 months: three years of quiet for the wine left to mature on the stacks together with its own yeasts. A wine that comes from a very particular area of the province of Verona: that of the ancient volcano of Calvarina, the largest extinct volcano of the Eocene across the entire Alpine foothills. A harsh land but at the same time rich in minerals that give the wine great and complex aromatic sensations. The significant time of fermentation has enhanced its characteristics of complexity and especially softened its typical exuberant characters. The wine from which this sparkling wine is made comes from fermentation in both steel and aging in oak barrels. All phases of production are manual, including the remuage sur pupitres.
