
Taccorosso is a pure Negroamaro obtained from the oldest vineyards of Cantina Paolo Leo, between the provinces of Taranto and Brindisi. The ancient bush vines produce very low yields of great quality. The concentration of the fruit, during the ripening phase, explodes in the glasses, giving a wine of prized structure and body. To obtain such a complex wine, the harvest is done manually in the early hours of the morning, dedicating great attention to the bunches. After harvesting, the grapes undergo destemming and the crushed grapes are left to macerate in contact with the skins for 12-15 days, fermenting at a controlled temperature of 25°C. Subsequently, it is matured for 3 months in steel tanks, 10 months in tonneaux, and 3 months in bottles. With a ruby red color and elegant garnet hues, this Negroamaro is particularly complex to the nose, with hints of berries, myrtle, and juniper. Tempting spices reminiscent of licorice, coffee, and Mediterranean aromatic herbs. On the palate, it offers fascinating tannins. Soft and velvety, it provides a sensational taste-olfactory harmony.
