They were already used in ancient Egypt to prepare bread, flatbreads, and soups. Today they are cultivated in open fields by local farmers in Lazio. Rich in vitamins, proteins, fibers, calcium, and phosphorus, they are perfect for soups, creamy soups, purees, and delicious side dishes. Soak them for at least one day, or even two. They will be ready in about 60-90 minutes, but it is really worth it. I recommend enjoying this wonderful legume simply, adding just a pinch of salt and a drizzle of extra virgin olive oil.
