In a bowl, mix the eggs with the brown sugar, grated lemon peel, and mashed bananas.
Add the water, oil, rice flour, starch, and baking powder, stirring until you get a creamy and voluminous batter.
Line a 22 cm mold with parchment paper and pour the batter into it.
Bake at 180 degrees for 20-25 minutes, or until fully cooked before serving.
Let cool and then slice to serve.
