

The apple cakes are delicious treats! The mini version of the classic apple pie, placed in muffin cups. Made without butter, with egg white that makes them very soft; the fruit pieces inside and on top provide moisture and melt-in-the-mouth texture... truly special!
Whip the egg white until stiff.
Gently combine all the ingredients, mixing with a spatula from top to bottom without leaving lumps.
Add half an apple cut into small pieces to the mixture, incorporate.
Distribute into muffin cups, top each cake with a piece of apple.
Bake in a preheated static oven at 180°C for about 25 minutes.

For optimal results, check the baking with a toothpick.
