Prepare the dough by combining the flour, hot water, and salt, and let it rest while you prepare the filling.
Finely chop the vegetables, mix them by hand with the ground meat, and season with salt, pepper, and spices to your liking.
Roll out the dough with a rolling pin until it's thin enough, then use a pastry cutter to make circles. Place a bit of ground meat in the center of each circle, then "wet" your fingers with some water and moisten half of the circle. Fold each dumpling in half and make pleats from the center outward.
Put some oil and soy sauce in a large pan and cook the gyoza until they are golden brown, then add a bit of water and finish cooking by covering with a lid!
