Ingredients
- Ricotta whey only
100 - Egg white
200 - Mixed flours
80 - Honeyto taste
- Red fruitsto taste
- Baking powder for desserts1/2 teaspoon
Preparation

Mix the ricotta with the egg whites and a teaspoon or more of honey or sweetener to your liking, then incorporate the flour and baking powder (the mixture doesn't need to be super smooth, a few lumps are fine).
- STEP 2 OF 3
Heat a non-stick pan and when it's hot, lower the heat to minimum and pour a generous spoonful of batter, then add a handful of red fruits (or chocolate chips) in the center and cover them with another half spoonful of batter. Cover with a lid and cook until you see bubbles on the surface, then flip them and cook on the other side.
