A cake made with plenty of dried fruits, soft, juicy, filled with apples and scented with cinnamon. A simple, quick dessert rich in irresistible goodness. Try it for snack time or breakfast.
Beat the eggs with the sugar until you get a light and frothy mixture.
Roughly chop the walnuts, pine nuts, and almonds in a food processor.
Slice the apples and drizzle them with the juice of a lemon.
Pour the dried fruits into the egg and sugar mixture and stir.
Add the milk, sunflower oil, apples, a level tablespoon of cinnamon, and the sifted baking powder.
Mix well to combine the ingredients.
Add the flour and stir again.
Pour everything into a greased and floured 30x18 cm rectangular pan or a 22 cm diameter cake tin.
Roughly chop about ten walnuts and ten almonds and cover the surface of the cake.
Also add about twenty pine nuts and bake at 180°C for 45 minutes.
