
Ricotta and Raisin Cookies
The softness of these cookies is truly unique! I often use ricotta for my desserts because I love the texture it gives to the dough, so I decided to make cookies as well. I combined ricotta with some raisins and a nice orange zest to create these delicious treats! They take less than 10 minutes to make and are so soft that they'll be gone in no time! If you don't like raisins, replace them with chocolate chips, nuts, or simply omit them!
Ingredients
- Soft butter
125g125g - All-purpose flour
200g200g - Potato starch
50g50g - Baking powder
6g6g - Ricotta
250g250g - Salt
1pinch1pinch - Orange zest
1unit1unit - Egg
2unit2unit - Raisins
50g50g - Brown sugar

Preparation

In a bowl, pour the flour, starch, sugar, baking powder, a pinch of salt, and orange zest.
- STEP 2 OF 6
Add the soft butter cut into pieces and start kneading with your fingertips until crumbs form.
- STEP 3 OF 6
Add the eggs and ricotta and, using a spoon, form a fairly sticky mixture. Do not add more flour.

Add the raisins or chocolate chips and mix.

On a baking sheet lined with parchment paper, form small mounds spaced apart with a spoon.

Bake at 180 degrees for about 20 minutes.
