Healthy, light and colorful one-dish meal: Carnaroli rice with turmeric accompanied by escarole and steamed cod fillets. Simple, quick and suitable also for gluten-free, lactose-free and egg-free diets.
Wash the rice and boil it in salted water according to the time indicated on the package.
Only at the end of the rice cooking add one tablespoon of extra virgin olive oil and the turmeric, stirring to distribute the color and flavor.
Prepare the fish: in a pan pour a little water and the white wine, position a steamer basket with the cod fillets on top and cook until the fish is cooked and tender.
In another pan boil the escarole in a little water until it is tender, then drain it.
Assemble the dish by placing the rice, escarole and cod fillets. Dress with the remaining tablespoon of extra virgin olive oil and sprinkle with oregano to taste.
