This apple cake is gluten-free, dairy-free and without added fats but truly delicious! The apples are caramelized with cinnamon and sugar, and the cake is decorated with a cinnamon glaze and redcurrants.
Wash, peel and cut the apples into regular pieces. Put them in a bowl, add 1 tablespoon of cornstarch and mix well.
In a pan, put the coconut oil and let it melt. Add the sugar, cinnamon and stir. Add the apples and mix well, place over low heat and cook for about 10 minutes.
In a bowl, break the eggs, add the sugar and beat with an electric mixer until you get a frothy and thick mixture.
Preheat the oven to 180°C (static).
In another bowl, mix together the cake mix, cornstarch, baking powder and add the egg mixture, mixing well, being careful of lumps.
Add the milk, mix again.
Add the caramelized apples and fold in with a spatula from bottom to top until incorporated.
Line the cake pan with parchment paper and pour in the batter, bake for about 25/30 minutes. Before removing from the oven, do the toothpick test.
Let cool completely before decorating.
Make the glaze, in a small bowl mix the powdered sugar, cinnamon and water. You can add more or less water depending on how thick you want the glaze.
Pour the glaze over the cake and decorate with redcurrants and powdered sugar.
