Peel and cut a small apple into tiny pieces.
In a bowl, crack an egg, add 2 tablespoons of gluten-free mix, 2 tablespoons of yogurt, and a pinch of baking powder, mix well until you get a smooth and lump-free batter.
Add the apples and mix well.
Heat and oil or butter a non-stick pan and set to medium heat.
Pour 2 tablespoons of batter and slightly flatten the surface.
Cover with a lid and let cook for a few minutes, flip and do the same.
Serve hot with maple syrup and powdered sugar to taste.
