
Simple gluten-free and lactose-free cake
My grandmother's cake, also called Torta Graziella, is a soft and fragrant cake made with gluten-free and dairy-free ingredients, perfect for an inclusive Christmas. The original recipe included flour, milk, and butter, but this version is suitable for those with intolerances or special dietary preferences.
Ingredients
- Gluten-free cake mix
250g250g - Eggs
2units2units - Sugar
200g200g - Sunflower oil
120g120g - Plant-based milk
0.5l0.5l - Instant baking powder
1sachet1sachet - Vanilla paste
2teaspoons2teaspoons - Gluten-free breadcrumbs for the cake pan
2tablespoons2tablespoons - Salt

Preparation

Preheat the oven to 180°C in static mode.

In a bowl, break the eggs, add the sugar and beat with an electric mixer for a few minutes until you get a fluffy mixture.

Add the oil, plant-based milk and vanilla paste, then mix with the mixer.

Add the sifted gluten-free mix and baking powder, mix with the mixer until you get a homogeneous and lump-free mixture.

Oil the cake pan and sprinkle it with gluten-free breadcrumbs.

Pour the batter into the cake pan, tapping it lightly to release air bubbles.

Bake for about 25-30 minutes or until golden and dry in the center with the toothpick test.
