Beat the egg yolks with the sugar and lemon zest. Add the rice flour, spreadable cheese, and baking powder.
Whisk the egg whites until stiff peaks form and gently fold them into the mixture.
Pour into a non-stick cake tin (I use silicone ones) and bake for 40 minutes at 170 degrees in a preheated static oven.
It's a cake with very few calories. If you prefer to enrich it, you can use it as a cream on a base of cookies, butter, and sugar to make an excellent cheesecake.
