
Delicious cookies that you can flavor as you like. I used ground ginger, but vanilla, cinnamon, etc., are also good. I decorated them with melted dark chocolate, but you can use colored sprinkles, sugar or hazelnut granules, etc.
In the video, you will see that I use the Bimby. However, I will provide you with the steps to knead by hand. In a bowl, work the butter cut into pieces with the sugar and ginger until you obtain a sort of cream.
Add the egg and mix until absorbed. Combine the flour and cream. Knead until you obtain a smooth and homogeneous dough.
Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Roll out the dough to a thickness of about 1 centimeter and cut the cookies with cookie cutters. Place them on a baking sheet covered with parchment paper.
Bake in a preheated static oven at 180 degrees for 15 minutes. Let them cool.
Melt the dark chocolate (I have an electric melting pot, but melting it in a bain-marie will suffice) and dip the cookies as desired. Let them cool on parchment paper and enjoy them for breakfast or a snack.
They remain crisp for several days in an airtight tin or glass container.
