Super buttery cookies to enjoy with tea ☕️
Combine the sugar, softened butter in pieces, flour, cornstarch, and 1 tablespoon of cold water. Knead until all ingredients are combined.
Compact the dough into a ball, place it between 2 sheets of parchment paper, and roll it out with a rolling pin to a thickness of about 5 mm.
Shape the cookies using molds or simply by cutting rectangles. Arrange them on the baking sheet and prick them with a fork.
Let rest in the refrigerator for at least 30 minutes.
Preheat the oven to 170 degrees and bake the cookies for 15 minutes. Let cool before enjoying.

They stay crisp for several days in an airtight tin or glass container.
The original Scottish ones are rectangular, but I like little stars!
