Delicious crispy filo pastry baskets filled with pears, walnuts, and cheeses, perfect as a Christmas appetizer.
Cut the pears into small cubes and quickly caramelize them in a pan with a knob of butter and a sprinkle of brown sugar. Alternatively, use them raw.
Overlap 5 small squares of filo pastry, brushing them between each layer with a water and oil emulsion.
Place the sheets inside the molds, add walnuts at the base, then pears and cheeses.
Bake at 200 degrees for 8-10 minutes.
Finish with more walnuts and a drizzle of honey on top.
