Boil the potatoes starting from cold water for about 15-20 minutes depending on their size, until they are softened but not fully cooked.
Cut the potatoes into fairly thick slices and spread sausage on each slice.
Grease a baking tray and sprinkle it with breadcrumbs.
Arrange all the potato slices in the tray, drizzle with olive oil on top, add salt, your preferred spices, and plenty of mozzarella or scamorza.
Bake at 200 degrees Celsius for 15 minutes covered with aluminum foil and for another 10 minutes uncovered, until a crispy crust forms.
