A delicious lemon mimosa cake, perfect for celebrating International Women's Day. With a soft sponge cake and a lemon diplomat cream, this cake is an elegant and fragrant dessert.
In a bowl, break the room temperature eggs and beat for 15 minutes with the sugar and vanilla until the volume triples.
Gradually add the sifted flour and potato starch and the limoncello, gently folding with movements from bottom to top.
Pour the batter into a buttered 20 cm mold and bake in a preheated static oven at 180°C for 30-35 minutes.
Let the sponge cake cool, then cut it into 3 layers, one of which is thinner to obtain the crumbs.
Soak the sponge cake with mixed limoncello and milk, add the diplomat cream and layer the cake.
Decorate the cake with the sponge cake crumbs and serve.
