Preheat the oven to 200°C.
Roll out one puff pastry sheet on a baking tray lined with parchment paper.
Evenly distribute the speck, mozzarella or scamorza, and stracchino over the pastry.
Cover with the second puff pastry sheet and seal the edges well.
Prick the surface with a fork to prevent it from puffing up too much during baking.
Bake for about 20 minutes or until the surface is golden.
Let it cool slightly, cut into squares, and serve.
