Sandy potatoes with a golden crust and very soft inside, perfect both in the oven and in the air fryer.
Cut the potatoes into cubes and boil them starting from cold water for about 10-15 minutes; they should soften but not fall apart.
Transfer them to a bowl and season with a generous drizzle of oil, plenty of breadcrumbs, salt, pepper, paprika, and Parmesan, then gently mix with a spatula to ensure all the seasonings adhere well.
Place them spaced out on baking paper, add another drizzle of oil on top, and cook in the oven or air fryer at 200 degrees Celsius for 15-20 minutes or until perfectly golden.
