Cut the potatoes into cubes and boil them starting from cold water for about 10-15 minutes, they should soften but not fall apart.
Transfer them to a bowl and season with a generous drizzle of oil, plenty of breadcrumbs, salt, pepper, paprika, and Parmesan, and mix gently with a spatula to ensure all the seasonings adhere well.
Place them on parchment paper well spaced, add another drizzle of oil on top, and bake in the oven or air fryer at 200 degrees for 15-20 minutes or until perfectly golden.
Perfect both in the oven and in the air fryer.
