Clean and thinly slice the artichokes, then place them in a bowl with cold water and lemon to prevent browning.
Cook the artichokes in a pan with oil and a garlic clove for 15-20 minutes.
Dice the potatoes and cook them in a pan with a drizzle of oil for 15-20 minutes, adding salt, pepper, and rosemary.
In a bowl, beat the eggs, then add salt, pepper, stracchino, artichokes, and grated Parmesan.
Take a puff pastry sheet, prick the bottom, and add breadcrumbs and coppa.
Combine the egg mixture and add the remaining artichokes, stracchino, and potatoes.
Top with a bit of Parmesan, breadcrumbs, and a drizzle of oil.
Bake at 180 degrees for 35-40 minutes in a preheated fan oven. For the last 5 minutes, turn on the grill.
Great to prepare in advance and, if there's any left, to bring as a packed lunch to the office.
For the last 5 minutes of cooking, activate the grill for a perfect browning.
