Cut the potatoes into cubes and boil them starting from cold water for about 15 minutes, until they soften without falling apart.
Season them with oil, salt, pepper, Parmesan, and breadcrumbs, mixing with a spatula.
Line a baking dish with the puff pastry and prick it with a fork.
Add the ham, cheese, and potatoes.
Drizzle a little oil on top and generously sprinkle with Parmesan.
Seal the edges of the puff pastry and brush them with the egg yolk.
Bake at 180°C for 20-25 minutes.
