
Cut the pears into small cubes and quickly caramelize them in a pan with a knob of butter and a sprinkle of brown sugar. Alternatively, use them raw.
Stack 5 small squares of fillo pastry, brushing between each one with the emulsified water and oil.
Place the sheets inside the muffin tins, add the walnuts to the bottom, then the pears and cheeses.
Bake at 200 degrees for 8-10 minutes.
Finish with more walnuts and a drizzle of honey on top.
