Beat the egg whites until very stiff, gradually adding the erythritol and gingerbread spices.
Place the beaten egg whites into a piping bag and create gingerbread men freehand or using a cookie cutter.
Bake for one hour at 100 degrees, turn off the oven and leave the meringues inside for another hour. Do not open the oven.
