Preparation
- STEP 1 OF 3
Wash and cut in half lengthwise, make incisions in the flesh, massage with salt and oil and place in the air fryer for 15'
- STEP 2 OF 3
Meanwhile, fluff 50g of couscous with a bit of vegetable broth, add 80g of tuna, cherry tomatoes, olives, and basil. Adjust the salt
- STEP 3 OF 3
After cooking the eggplant, mash the flesh with a utensil (pushing it downwards), add the couscous mixture, a bit of breadcrumbs, a drizzle of extra virgin olive oil, and back in the fryer for another 3-4'
