Looking for a light and healthy idea? Try zucchini mousse, a delicate and versatile plant-based cream, ideal for an appetizer or a nutritious snack with our breadsticks.
Wash, trim, and slice the zucchinis into rounds or, if you choose dehydrated zucchinis, place them in a bowl and completely cover with hot water for 20-30 minutes, then remove the excess water by gently pressing them.
For fresh zucchinis, opt for light cooking to preserve nutrients: steam (8-10 minutes), boil (in a little unsalted water for the same time), or sauté (with a drizzle of oil and garlic until soft).
Drain the cooked zucchinis well and let them cool completely.
Transfer the cooled zucchinis to a blender with the plant-based yogurt, lemon juice, evo oil (if using), fresh herbs, garlic (if using), salt, and pepper.
Blend until you obtain a smooth and homogeneous cream.
For a firmer texture and more intense flavor, chill the mousse in the refrigerator for at least 30 minutes before serving.
