Peel the potatoes and slice them thinly using a mandoline.
Line a baking tray with parchment paper, add the grated provola, and arrange all the potato slices slightly overlapping to form a rectangle.
Brush them with a drizzle of oil on top and bake at 200 degrees for 20-25 minutes.
Remove from the oven and add the spreadable fresh cheese, cooked ham, and remaining provola.
If desired, bake again for just 4-5 minutes to melt the provola inside.
Slice into rounds and enjoy!
