Dice the potatoes and boil them starting from cold water for about 15 minutes, until they soften without falling apart.
Season them with oil, salt, pepper, parmesan cheese, and breadcrumbs, mixing with a spatula.
Line a mold with puff pastry and prick it with a fork.
Add the ham, cheese, and potatoes.
Drizzle with a bit of oil on top and a generous sprinkle of parmesan cheese.
Seal the edges of the puff pastry and brush them with the egg yolk.
Bake at 180°C for 20-25 minutes.
