Couscous with peas and shrimp is a flavorful, quick, and easy dish to prepare. Couscous is a food of North African and Mediterranean origin, made from durum wheat semolina reduced to very fine grains, seasoned in many variations: stewed vegetables, seafood, meat. This recipe features peas cooked in a light tomato sauce and a sauté of onion and fresh shrimp. Excellent served hot in single-serving tajines or cold as a buffet dish.
Bring salted water to a boil in a pot and cook the peas until tender.
In a pan, heat the extra virgin olive oil and sauté the finely chopped onion until golden.
Add the tomato puree to the onion and cook for a few minutes until a light sauce forms.
Add the peas to the tomato sauce and mix well, adjusting salt and pepper to taste.
In another pan, sauté the shelled shrimp with a drizzle of oil until cooked and lightly golden.
Prepare the couscous following the package instructions, usually by wetting it with hot water and letting it rest covered for a few minutes.
Mix the couscous with the peas in tomato sauce and the sautéed shrimp.
Serve hot in single-serving tajines or cold as a buffet dish.
