Preparation

Cook the fresh mussels after cleaning them.

In a large pot, pour some oil and sauté the garlic.
- STEP 3 OF 7
Add the mussels and chopped parsley and cook for about 15 minutes, until the mussels are completely open.
- STEP 4 OF 7
Meanwhile, cook the gnocchi in an air fryer, adding a generous tablespoon of oil for each package.
- STEP 5 OF 7
In the meantime, wash the vegetables and slice the olives into rings, adjusting the quantity of vegetables to your liking.

Cut the zucchini into spaghetti, halve the cherry tomatoes, quarter the tomatoes, and chop the arugula.
- STEP 7 OF 7
In a container, combine the gnocchi, vegetables, opened mussels without their shells, salt, a bit of oil, and mix well.
