

Light cake based on carrots, oat flakes, and Greek yogurt, without sugar, cooked in an air fryer. Ideal for breakfast or snack, customizable with dried fruits, cocoa or alternatives for intolerances.
Blend the ingredients: combine blended carrots, oat flakes, egg white, Greek yogurt, coconut flour, cinnamon, and baking powder and blend until a homogeneous dough is obtained. If a more rustic consistency is preferred, blend the oat flakes less.
Transfer the mixture to an air fryer-safe pan (preferably silicone). Set the air fryer to 160°C and cook for about 20-30 minutes; check the cooking with a skewer: if it comes out clean, the cake is ready.
Let it cool for a few minutes before removing from the pan. Serve warm or cold, possibly accompanied by a spoonful of Greek yogurt or a sprinkle of cinnamon.

Store in the refrigerator for 2-3 days in an airtight container. It can be frozen in slices and reheated in an air fryer or microwave.
Variations: add nuts, almonds, or chia seeds for crunch; add cocoa powder for a chocolate version; replace Greek yogurt with soy yogurt for a dairy-free version; use gluten-free oat flakes if necessary.
