

Light and gluten-free apple cake: a light, healthy and tasty dessert, lactose-free and butter-free, made with rice flour, rice milk and good extra virgin olive oil!
Wash the apples thoroughly, peel them and cut them into small pieces. Put the pieces in a bowl and spray a little lemon juice to prevent them from oxidizing.
In a large bowl, crack the eggs and add the brown sugar. Use a whisk to beat everything until you obtain a light and frothy mixture.
Add the extra virgin olive oil and water to the egg and sugar mixture. Mix well to combine the ingredients.
Sift the rice flour and cream of tartar, then gradually add them to the mixture, continuing to stir. Add a pinch of salt.
Incorporate the apple pieces into the mixture, gently mixing with a spatula to distribute them evenly.
Line the baking pan with parchment paper and pour in the batter, leveling it with a spatula.
Preheat the oven to 180°C and bake the cake for 30-40 minutes. Check the cooking by inserting a toothpick in the center: if it comes out clean, the cake is ready.
