

...of Christmas because for me raisins and cinnamon bring me back to this time of year. When that sweet, aromatic, and delicate scent wafts from the oven, I immerse myself in the most magical atmosphere of the year! A few ingredients for rustic cookies, tasty and suitable even for those following an entirely plant-based diet!

In a bowl combine sugar, oil, and cinnamon. Mix and pour in the plant-based milk. Mix again and incorporate the all-purpose flour and coconut flour.
Knead and finally incorporate the raisins. If you do not like them, substitute with chocolate chips. Try to create a homogeneous dough and finally form the cookies by taking a bit and forming balls.
Place each ball on the baking sheet lined with parchment paper and press them a bit with your fingers. Bake at 180 degrees for about 25 minutes.

Store in a cookie jar, sealed tightly... for two or three days!
If you do not like raisins... replace them with chocolate chips!
