It's a tasty and delightful dinner saver featuring one of the best combinations ever: potatoes and salmon. To prepare it, you just need to follow a few simple steps.
1. Wash and peel 5 medium-sized potatoes, then slice them into fairly thin rounds.
2. In a bowl, break two eggs, pour a full glass of milk, add salt, pepper, and parsley. Mix well.
3. Grease and sprinkle breadcrumbs on a baking dish and start layering with potatoes and shredded salmon.
4. Once the layers are complete, pour the milk and egg mixture evenly.
5. Finish with a generous addition of grated Parmesan on the surface of the potatoes and bake at 200 degrees for about 35/40 minutes.

It can be stored in the fridge for a couple of days or frozen in single portions.
I used salmon, but a vegetable ingredient or whatever you have in the fridge that you don't want to waste will work just fine.
