
Pumpkin Meatballs.. with a Melty Center!
..among the many pumpkin-based recipes, I bet you were missing these! Tasty meatballs with a crispy exterior and soft interior.. with a melty center that will drive you crazy.
Ingredients
- Pumpkin
300g300g - Chickpea flour
100g100g - Melty cheese
1Thick slice1Thick slice - Basil and chives
1Teaspoon1Teaspoon - Breadcrumbs
200g200g - Sesame seedsTo Taste
- Egg
1unit1unit - Ground nutmeg
1Teaspoon1Teaspoon - Sunflower seed oilAs needed
- Stale bread

Preparation

Mash the pumpkin with a fork and then add the ingredients. The well-squeezed bread, the egg, salt, nutmeg, and aromatic herbs.
- STEP 2 OF 4
Give it an initial mix and then start incorporating the chickpea flour (or breadcrumbs) until the mixture is workable by hand. At this point, take a small amount of the mixture.
- STEP 3 OF 4
Create a hole in the center to place the cheese and close it up to form the meatball. Roll them in the coating before placing them on a baking tray lined with parchment paper and greased with a bit of seed oil.

Bake at 200 degrees for about 15/20 minutes, turning them halfway through cooking.

How did I cook the pumpkin? Before using it, I cut it into cubes and baked it at 180 with ventilation for about 15 minutes. It will become nice and soft, and you can mash it with a fork!
