

..among the many pumpkin recipes, I bet you were missing these! Delicious meatballs with a crunchy outside and soft inside.. with a gooey heart that will drive you crazy.

Mash the pumpkin with a fork and then add the ingredients. The well-wrung bread, the egg, the salt, the nutmeg, and the aromatic herbs.
Give it a first mix and then start incorporating the chickpea flour (or the breadcrumbs) until the mixture becomes workable with your hands. At this point, take a small amount of the dough.
Create a hole in the center to place the cheese and close it to form the meatball. Coat them in breadcrumbs before placing them on a baking tray lined with parchment paper and greased with a bit of seed oil.
Bake at 200 degrees for about 15/20 minutes, turning them halfway through cooking.

How did I cook the pumpkin? Before using it, I cut it into cubes and baked it at 180 with ventilation for about 15 minutes. It becomes nice and soft, and you can mash it with a fork!
