If we choose to make homemade buns, we start with these. In a stand mixer, mix the flour with the crumbled yeast, sugar, and previously boiled potatoes.
Add the milk gradually and mix for about 3-4 minutes. Add the egg yolk and, when the dough is well combined, add the salt and finally the butter pieces, one at a time.
Once a smooth dough is obtained, let it rise for about two hours.
Form four buns of about 130 g each and let them rise on a baking sheet lined with parchment paper for half an hour.
Brush the surface with milk or egg and sprinkle seeds on top as desired.
Bake at 180°C for about 10-12 minutes. Once cooked, brush them with water to make them even softer.
Meanwhile, prepare the sauce by mixing ketchup with mayonnaise, mustard, vinegar, garlic powder, and finely chopped pickles, and set aside.
Season the meat with salt and pepper and form patties of about 100 g each.
Meanwhile, cook the bacon in a non-stick pan and when it is nice and crispy, set it aside.
In the same pan where we cooked the bacon, place our patties (2 per person, 100 g each) and flatten them with a meat tenderizer.
Cook the hamburgers on both sides, add our cheese on top, and wait for it to melt.
Assemble our burger by cutting the bun in half, placing, in order, the bacon slices, hamburgers, and sauce.
