Mix the two flours in a bowl, place the sugar, eggs, grated orange zest, pinch of salt, and oil in the center.
Mix everything well and knead until you get a homogeneous dough.
Cover with plastic wrap and let it rest in the refrigerator overnight.
The next day, roll out part of the dough to a thickness of 3-4 mm, place it in a baking pan lined with parchment paper, and fill with the jam.
Roll out the other part of the shortcrust, create the lattice according to your preferred decoration. Bake in a preheated oven at 180 degrees for 30-35 minutes.
