Take the shoulder out of the refrigerator about 30 minutes before serving to bring it to room temperature.
Slice the shoulder thinly with a sharp knife or slicer.
Arrange the slices on a cutting board or serving platter alternating with cheeses and olives.
Slice the bread and toast it lightly if desired.
Add small dollops of mustard or jam to taste to contrast the flavors.
Garnish with arugula or mixed leaves and serve accompanied by Tuscan red wine.
