The Alcazar Cake is a delicious traditional French dessert. It is a cake with a crispy shortcrust pastry base and a soft filling of apple or pear jam, enriched with almond flour. The cake is decorated with a layer of icing sugar and served with a dusting of powdered sugar. It is perfect to enjoy with a cup of tea or coffee.
Roll out the pastry and fit it to the bottom and sides of a pan about 24 cm in diameter
Prick the bottom and spread it with apple jam (or pear jam)
Beat the egg whites until stiff
While continuously beating, mix in half of the sugar, wheat flour, half of the almond flour, and melted (not hot) butter
Pour everything into the pan and bake in a preheated oven at 200 degrees until the meringue is golden
Cream the remaining sugar with the egg yolks; add the remaining almond flour and the liqueur; once a smooth batter is obtained, place it in a pastry syringe with a flat fluted nozzle and draw a lattice on the meringue; also cover the outer edge of the cake with a strip of almond paste and return it to the hot oven
When the almond paste 'lattice' is golden, remove the cake from the oven and pour a spoonful of strawberry jam melted in a bain-marie into each square
For birthday parties, place a small candle in each square before serving
