Almond pastries are typical sweets of the Sicilian tradition. They are soft and fragrant, with an irresistible almond flavor. They are perfect to enjoy with tea or coffee.
Dissolve the sugar with the 3 glasses of water over low heat
When it starts to thread, remove the pan from the heat
Add the almond flour, the maiorca flour, the vanilla and mix until the dough comes away from the pan all together
Pour the mixture onto a wet marble table
As soon as it has cooled, work it thoroughly with your hands
When it is smooth and compact, place it in molds and decorate as desired
