
Almond pastries are delicious treats typical of Italian tradition. These small sweets are made with ground almonds, icing sugar, egg whites, vanillin, candied cherries, peeled almonds and shelled whole pistachios. They are perfect to serve as a dessert after a meal or to enjoy with a cup of coffee or tea.



Mix the ground almonds with the icing sugar and vanillin, then gradually incorporate the egg whites (not beaten) kept at room temperature.
Place the mixture in a piping bag fitted with a star tip and pipe onto a baking sheet lined with parchment paper, forming ring-shaped rosettes or S-shaped cookies.
Preheat the oven to 200°C.
Decorate each pastry with half a candied cherry, one almond or one pistachio, and bake for 15 minutes.
