Blanch the almonds, chop them and dry them in the oven at medium heat
In a saucepan, melt the sugar, add the almonds, and while stirring wait for them to take on color
Then pour the mixture onto an oiled marble surface and let it cool; then crush it to obtain a very fine granule
Whip the egg whites until stiff and add the granules
Place the mixture in a buttered mold and bake in a water bath in the oven for 1/2 hour (test with a toothpick: it should come out dry)
Unmold and serve cold
