Almond puddings are delicious spoon desserts, soft and fragrant. Made with skim milk, gelatin, almond essence, granulated sugar, mixed seasonal fruit, orange juice, and seed oil, they are a light and tasty dessert that can be enjoyed all year round.
Soak the gelatin sheets in cold water for about ten minutes
Heat the milk without boiling it, remove it from the heat and immediately add the well-squeezed gelatin, almond essence, and a tablespoon of sugar
Stir with a wooden spoon until all the gelatin has dissolved
Grease small pudding molds with a little seed oil and pour in the almond milk
Refrigerate for two hours
Wash and cut the fresh fruit into pieces, let it marinate in a bowl with the remaining sugar and orange juice
Turn the gelatin molds onto individual plates after briefly dipping them in a basin of hot water
Arrange the fruit with its juice around them and serve everything very cold
