Almond puddings are delicious spoon desserts, soft and fragrant. Prepared with skim milk, gelatin sheets, almond extract, granulated sugar, mixed seasonal fruit, orange juice and vegetable oil, they are a light and tasty dessert that can be enjoyed all year round.
Soak the gelatin sheets in cold water for about ten minutes
Heat the milk without bringing it to a boil, remove it from the heat and immediately add the well-drained gelatin, the almond extract and one tablespoon of sugar
Stir with a wooden spoon until all the gelatin has dissolved
Lightly oil small pudding molds with a little vegetable oil and pour in the almond milk
Place in the refrigerator for two hours
Wash and cut the fresh fruit into pieces, let it macerate in a bowl with the remaining sugar and the orange juice
Turn the gelatin molds out onto individual plates after briefly dipping them in a bowl of warm water
Arrange the fruit with its juice around them and serve everything very cold
