On a surface, sift the flour and baking powder
Add the sugar, ground almonds, egg yolks, butter, and lemon zest
Quickly knead and form a ball
Wrap it with parchment paper and let it rest for about 30 minutes in a cool place
Form slightly flattened balls and dip them in beaten egg white (not whipped)
Place them on a baking sheet lined with parchment paper and decorate with almonds, blanched and peeled pistachios, pine nuts
Put in a preheated oven at 180 degrees for about 20 minutes
