The ice cream is prepared by mixing all the ingredients together and then chilled in an ice cream maker to achieve a perfectly creamy consistency. Pour the milk and cream into a saucepan, place them on the heat, warm them up to the boiling point, and then remove them from the heat.
Place the egg yolks in a bowl, add the sugar, beat them until frothy, and gradually incorporate the milk and cream while stirring.
Pour the mixture into the same container previously used for the milk, place it on the heat (or better, in a bain-marie), and cook until it begins to lightly boil.
Then remove the cream from the heat, pass it through a sieve, and let it cool, stirring repeatedly.
Meanwhile, finely chop the amaretti until they are almost powdered; add them to the cream.
Finally, add the Amaretto di Saronno and mix thoroughly.
Pour the mixture into the ice cream maker and let the ice cream set in the freezer according to your device's instructions.
