Amaretto ice cream is a delicious creamy and aromatic dessert perfect for summer days. Its origin is attributed to the Lombardy region, famous for the production of Amaretto Di Saronno. The recipe uses simple ingredients such as milk, liquid cream, egg yolks, sugar, Amaretti biscuits and, of course, Amaretto Di Saronno. The ice cream is prepared by mixing all the ingredients together and then chilling it in an ice cream maker to obtain a perfectly creamy texture. Enjoy it on its own or serve it in a small bowl with crumbled Amaretti biscuits for an extra crunchy touch.
Pour the milk and cream into a saucepan, put it on the heat, heat until just before boiling and then remove it from the heat
Put the egg yolks in a bowl, add the sugar, whisk until frothy and gradually incorporate the milk and cream while stirring
Pour the mixture into the same pan previously used for the milk, place it on the heat (or better, in a bain-marie) and cook until it begins to lightly boil
Then remove the custard from the heat, strain it through a sieve and let it cool, stirring repeatedly
Meanwhile crush the amaretti finely until almost powdered; add them to the custard
Finally add the Amaretto Di Saronno and mix thoroughly
Pour the mixture into the ice cream maker and let the ice cream set in the freezer according to your machine's instructions
