Apfelstrudel is a traditional Austrian dessert made from puff pastry filled with apples, pine nuts, almonds, raisins, sugar and flavored with brandy and grated lemon zest. It is a Viennese-origin dessert highly appreciated for its crunchy texture and sweet, fragrant filling.
Thaw the pastry, then roll it out.
Meanwhile peel and slice the apples, placing them in a bowl with the pine nuts, almonds, sultana raisins, sugar and lemon zest; mix everything and drizzle with the brandy, letting the mixture macerate for half an hour.
After rolling out the pastry, place half of the filling in the center of each sheet and fold the pastry over, overlapping the edges.
Beat the egg yolk and brush it over the pastry, place on a baking tray lined with parchment paper and bake in the oven at 180°C for 45-50 minutes.
