

Apricot chutney is a delicious sweet-and-sour preparation typical of Indian cuisine. The combination of ripe apricots, onions, garlic and grated ginger creates an irresistible mix of flavors. This chutney is perfect as a side for cheeses and meats, but can also be used as a condiment for sandwiches and burgers. Place in a large pot 1000 g pitted ripe apricots, 1 sliced onion and 3 cloves of garlic, minced, and 300 g of sugar.
Add 150 g sultana raisins, 1 tablespoon grated ginger root, 1 tablespoon salt, 1 tablespoon crushed coriander seeds and 1 glass of wine vinegar.
Cook over high heat until the apricots are soft.
Drain everything, reduce the remaining liquid and pour it over the chutney.
Excellent with tongue or oven-baked ham.
