Aromatic cold broth is a summer recipe typical of Italian cuisine. Prepared with meat, mint, basil, chervil, thyme, parsley and salt, it is a light and refreshing dish to enjoy on hot days.
Prepare a fairly concentrated meat broth, let it cool and remove the fat by straining it through a fine-mesh sieve.
Chop a few basil leaves, a sprig of chervil and one of parsley, four mint leaves and a little thyme; gather everything in a soup tureen and pour the boiling broth over it.
Season with salt sparingly.
Let it infuse for at least 2 hours.
Strain the broth, warm it and then serve it in cups.
