Prepare a rather concentrated meat broth, let it cool, and skim it by passing it through a fine-mesh strainer
Chop a few basil leaves, a sprig of chervil, and a bunch of parsley, four mint leaves, and a bit of thyme. Gather everything in a soup tureen and pour the hot broth over it
Adjust the salt moderately
Let it infuse for at least 2 hours
Strain the broth, heat it, and then serve it in a cup
